Description
This hearty beef curry is rich in flavor and perfect for a comforting meal.
Ingredients
Scale
- 1 lb beef chuck
- 2 medium carrots
- 2 medium potatoes
- 1 large onion
- 2–3 tbsp curry powder
- 2–3 tbsp soy sauce
- 2 cups beef broth
- 2 cloves garlic
- 1 thumb-sized piece ginger
Instructions
- Chop the beef chuck into bite-sized pieces, dice carrots and potatoes, slice the onion thinly, and mince the garlic and ginger.
- In a large pot, heat oil over medium-high heat, add the beef pieces, season with salt, and sear until browned, about 5-7 minutes.
- In the same pot, sauté the onions for 3-4 minutes until translucent. Stir in the garlic and ginger, cooking for another 1-2 minutes.
- Return the seared beef to the pot, sprinkle in curry powder, add carrots, potatoes, broth, and soy sauce. Mix thoroughly.
- Bring to a boil, reduce to low, cover, and simmer for about 60 minutes until beef is tender and sauce is rich.
- Taste and adjust seasoning if necessary; simmer for an additional 10-15 minutes if adjustments are made.
Notes
- Brisket or round cuts can be used as alternatives for beef chuck.
- Parsnips can be swapped for carrots if desired.
- Sweet potatoes provide a healthier twist instead of regular potatoes.
- For gluten-free options, check soy sauce or use tamari.
