Turkey Corn Casserole

Description

A delicious and simple turkey corn casserole perfect for weeknight dinners.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion (peeled and chopped)
  • 1 pound ground turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup frozen corn
  • 12 ounces salsa
  • 15 ounces canned black beans (drained and rinsed)
  • 15 ounces cornbread mix (plus ingredients to prepare)
  • 8 ounces cheddar cheese (shredded)

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Place a 12-inch cast-iron skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, cook the onion with the turkey, cumin, and chili powder until browned, stirring frequently, about 10 minutes.
  3. Add the corn, salsa, and black beans to the skillet. Stir to combine and cook until heated through, about 5 minutes. Remove from the heat.
  4. Prepare the cornbread mix according to the package directions. Then pour the mixture evenly over the top of the turkey mixture and spread it out to cover the top.
  5. Bake for 15 minutes. Sprinkle the shredded cheese all over the top of the cornbread and cook for an additional 5 minutes. Remove from the oven and serve warm.

  • This recipe can be made ahead of time and reheated.
  • Feel free to add your favorite vegetables to the mixture.
