- 2 tablespoons mayonnaise or softened butter (for spreading)
Instructions
- Sauté the mushrooms and onions – Start by heating butter and olive oil in a skillet over medium heat. Add the sliced mushrooms and onions. As they cook, they will begin releasing moisture and gradually turn golden brown. Stir occasionally and allow them to caramelize for about 8–10 minutes. Season with salt and black pepper. The goal is soft, deeply browned mushrooms that smell rich and earthy.
- Prepare the bread – Spread mayonnaise or softened butter on one side of each slice of bread. This helps create that beautifully crisp, golden crust when the sandwich is grilled.
- Assemble the sandwich – Place two slices of bread butter-side down on a clean skillet or griddle over medium heat. Add a slice of Swiss cheese to each piece of bread. Spoon the warm mushroom and onion mixture evenly over the cheese. Top with another slice of Swiss cheese and finish with the remaining bread slices, butter-side up.
