Delicious and nutritious almond butter oat bars for a healthy snack.

- 1/2 cup whole milk greek yogurt
- 1/3 cup creamy almond butter
- 2 large eggs
- 2 Tablespoons refined coconut oil (melted)
- 1/2 cup maple syrup
- 1 Tablespoon vanilla extract
- 2 teaspoons ground cinnamon
- 1 3/4 cup rolled oats
- 1/4 cup finely ground almond flour
- 1/2 cup sliced almonds (or chopped walnuts)
- 1/4 cup mini chocolate chips (or mini white chocolate chips)
Instructions
- Preheat the oven to 325°F and line a 8-inch x 8-inch baking pan with parchment paper.
- In a large bowl, whisk together the yogurt, almond butter, eggs, melted coconut oil, maple syrup, vanilla extract, and ground cinnamon.
- Add the rolled oats, almond flour, sliced almonds, and mini chocolate chips. Mix together until combined.
- Transfer the mixture to the prepared baking pan and bake for 30-35 minutes (or until the bars can hold their shape and look set).
- Remove from the oven, let cool completely (at least 1 hour), and slice into bars.
- Serve and enjoy or save for later!
Notes
- These bars are great for meal prep and can be stored in an airtight container.
- Feel free to substitute the chocolate chips with dried fruits for a different flavor.
