Description

Delicious and nutritious almond butter oat bars for a healthy snack.


Ingredients

  • 1/2 cup whole milk greek yogurt
  • 1/3 cup creamy almond butter
  • 2 large eggs
  • 2 Tablespoons refined coconut oil (melted)
  • 1/2 cup maple syrup
  • 1 Tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 3/4 cup rolled oats
  • 1/4 cup finely ground almond flour
  • 1/2 cup sliced almonds (or chopped walnuts)
  • 1/4 cup mini chocolate chips (or mini white chocolate chips)

Instructions

  1. Preheat the oven to 325°F and line a 8-inch x 8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the yogurt, almond butter, eggs, melted coconut oil, maple syrup, vanilla extract, and ground cinnamon.
  3. Add the rolled oats, almond flour, sliced almonds, and mini chocolate chips. Mix together until combined.
  4. Transfer the mixture to the prepared baking pan and bake for 30-35 minutes (or until the bars can hold their shape and look set).
  5. Remove from the oven, let cool completely (at least 1 hour), and slice into bars.
  6. Serve and enjoy or save for later!

Notes

  • These bars are great for meal prep and can be stored in an airtight container.
  • Feel free to substitute the chocolate chips with dried fruits for a different flavor.
