Description
A delicious creamy soup made with chicken, cheese tortellini, and fresh spinach.

- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 pound chicken breast, diced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 cups chicken broth
- ½ cup sun-dried tomatoes, chopped
- 9 ounces cheese tortellini
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 minutes until softened. Stir in the garlic and cook for 1 minute until fragrant.
- Add diced chicken, season with salt and pepper, and cook for 6–8 minutes until golden and cooked through.
- Pour in chicken broth and bring to a simmer. Add sun-dried tomatoes and simmer for 5 minutes.
- Add cheese tortellini and cook according to package instructions, about 4–6 minutes.
- Reduce heat to low. Stir in heavy cream and Parmesan cheese. Let it melt and combine into a creamy broth.
- Stir in fresh spinach and cook until wilted. Taste and adjust seasoning if needed. Serve hot.
Notes
- This soup can be served as a main dish or appetizer.
- Feel free to add other vegetables to the soup such as carrots or peas.
- Leftovers can be stored in the refrigerator for up to 3 days.
